For the Chicken Skewers:
- 2 pounds boneless, skinless chicken breast, cut into 1-inch chunks
- 1 (14 oz) can full-fat coconut milk
- 3 tablespoons red curry paste
- 2 tablespoons brown sugar
- 2 limes, zested
- 1 inch fresh ginger, grated
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 12–14 wooden skewers, soaked in water
For the Peanut Sauce:
- 1/2 cup creamy peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 lime, juiced
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 3–4 tablespoons warm water
For Garnish:
- 1/2 cup fresh cilantro, chopped
- 1/4 cup roasted peanuts, crushed
- 2 limes, cut into wedges
Instructions
- Marinate the Chicken:
- In a large zip-top bag, combine coconut milk, curry paste, brown sugar, lime zest, grated ginger, salt, and pepper.
- Add chicken pieces and massage the bag to coat evenly.
- Pop in the fridge for 1-8 hours (longer = tastier!).
- Prepare the Peanut Sauce:
- Whisk together peanut butter, soy sauce, brown sugar, lime juice, sesame oil, and garlic.
- Gradually add warm water until you reach your desired consistency.
- Set aside at room temperature.
- Grill the Skewers:
- Preheat your grill to medium-high heat (around 375°F).
- Thread marinated chicken onto soaked skewers.
- Oil the grates (super important!).
- Grill for 4-5 minutes per side until chicken reaches 165°F.
- Serve:
- Arrange skewers on a platter.
- Drizzle with peanut sauce.
- Sprinkle with cilantro and crushed peanuts.
- Serve with lime wedges and extra sauce on the side.
Notes
- Don’t even think about using light coconut milk – full-fat is where the magic happens!
- Wooden skewers MUST be soaked for 30 minutes, unless you’re going for that “flaming torch” look 😉
- The peanut sauce can be made up to 3 days ahead – just store in the fridge and bring to room temp before serving.
