Instructions

  1. Combine the Base Ingredients: In a small saucepan, mix together the tomato paste, vinegar, and water. Stir well until fully combined.
  2. Add the Spices & Peppers: Stir in the Aji Panca paste, chipotle peppers, red pepper flakes, smoked paprika, cayenne, onion powder, garlic powder, and salt. Keep stirring until everything is evenly mixed.
  3. Bring to a Boil & Simmer: Heat the saucepan over medium-high heat until the mixture starts to boil. Reduce the heat to low and let it simmer for 5 minutes, stirring occasionally.
  4. Check the Consistency: The sauce should be thick but pourable. If it’s too thick, add a tablespoon of water at a time until you reach the desired consistency.
  5. Cool & Strain (If Needed): Let the sauce cool for a few minutes. If you want an ultra-smooth texture, pour it through a fine-mesh sieve to remove any chunks.
