  • 1 cup (150g) icing sugar, sifted
  • 1 teaspoon lemon zest
  • 2 teaspoons fresh lemon juice

Optional Passionfruit Icing:

  • 1/4 cup (60g) unsalted butter, softened
  • 1 cup (150g) icing sugar, sifted
  • 1 tablespoon fresh passionfruit pulp
  • 1 teaspoon lemon juice

Instructions

  • Prepare the Dough:
    • Preheat your oven to 350°F (180°C) and line two baking trays with parchment paper.
    • In a large mixing bowl, cream the butter, vanilla extract, and icing sugar with an electric mixer until light and fluffy.
    • Gradually add the sifted all-purpose flour and cornflour, mixing until a soft dough forms.
  • Shape the Cookies:
    • Roll the dough into small, even-sized balls (about 1 tablespoon each) and place them on the prepared baking trays.
    • Gently flatten each ball with the back of a fork to create a uniform thickness and pattern.
  • Bake:
    • Bake in the preheated oven for 12–15 minutes, or until the edges are set but not browned.
    • Allow the cookies to cool completely on the trays to prevent crumbling.
  • Prepare the Icing:
    • For the lemon icing, beat the butter, icing sugar, lemon zest, and lemon juice until smooth and creamy.
    • For the passionfruit icing, substitute the lemon zest and juice with fresh passionfruit pulp and a touch of lemon juice.
  • Assemble the Cookies:
    • Pipe or spread a generous amount of icing onto the flat side of one cookie, then sandwich it with another cookie.
    • Refrigerate for 10 minutes to set the icing before serving.
