For the Lemon Icing:
- 1/4 cup (60g) unsalted butter, softened
- 1 cup (150g) icing sugar, sifted
- 1 teaspoon lemon zest
- 2 teaspoons fresh lemon juice

- 1/4 cup (60g) unsalted butter, softened
- 1 cup (150g) icing sugar, sifted
- 1 tablespoon fresh passionfruit pulp
- 1 teaspoon lemon juice
Instructions
- Prepare the Dough:
- Preheat your oven to 350°F (180°C) and line two baking trays with parchment paper.
- In a large mixing bowl, cream the butter, vanilla extract, and icing sugar with an electric mixer until light and fluffy.
- Gradually add the sifted all-purpose flour and cornflour, mixing until a soft dough forms.
- Shape the Cookies:
- Roll the dough into small, even-sized balls (about 1 tablespoon each) and place them on the prepared baking trays.
- Gently flatten each ball with the back of a fork to create a uniform thickness and pattern.
- Bake:
- Bake in the preheated oven for 12–15 minutes, or until the edges are set but not browned.
- Allow the cookies to cool completely on the trays to prevent crumbling.
- Prepare the Icing:
- For the lemon icing, beat the butter, icing sugar, lemon zest, and lemon juice until smooth and creamy.
- For the passionfruit icing, substitute the lemon zest and juice with fresh passionfruit pulp and a touch of lemon juice.
- Assemble the Cookies:
- Pipe or spread a generous amount of icing onto the flat side of one cookie, then sandwich it with another cookie.
- Refrigerate for 10 minutes to set the icing before serving.
