For the Meatloaf:

  • 1 lb ground chicken
  • ½ cup Italian-style breadcrumbs (or almond flour for low-carb)
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder

For the Topping:

  • ½ cup shredded mozzarella cheese
  • ¼ cup marinara sauce (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper for easy cleanup.

Mix the Ingredients: In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, pepper, and onion powder. Mix gently until just combined—don’t overwork the meat!

Shape the Meatloaf: Divide the mixture into four equal portions and shape them into mini meatloaves. Place them in the prepared baking dish.

Bake: Bake for 20–25 minutes or until the meatloaves are firm and golden brown. The internal temperature should reach 165°F (74°C).

Add Cheese & Finish Baking: Remove the meatloaves from the oven and top each with a spoonful of marinara sauce (if using) and a generous sprinkle of mozzarella cheese. Return to the oven for 5 more minutes, until the cheese is melted and bubbly.

Serve & Enjoy: Garnish with fresh parsley and serve hot with your favorite side dishes!


Notes
