I’ve tested this recipe approximately a million times (tough job, but someone had to do it 😉), and it’s absolutely foolproof. Trust me, once you’ve made these, store-bought crumpets will never cut it again!


Ingredients

  • 500g strong bread flour (please, pretty please use the good stuff!)
  • 350ml warm water (think baby-bath temperature)
  • 2 teaspoons active dry yeast (fresh works too if you’re fancy!)
  • 1 teaspoon baking powder (our secret bubble-making friend)
  • 1 teaspoon sugar (just to feed those hungry yeast beasties)
  • 1½ teaspoons salt (don’t skimp – it’s crucial for flavor!)
  • 200ml warm milk (whole milk makes them extra luxurious)
  • 2 tablespoons melted butter (plus extra for greasing – we’re not shy with butter here!)

Instructions

  • Wake up your yeast! Mix it with the warm water and sugar in a bowl. Let it get nice and foamy (about 5-10 minutes). If it doesn’t foam, your yeast might be having a lazy day – better start fresh!
  • In your biggest mixing bowl (seriously, go big or go home), whisk together the flour and salt. Make a well in the center – we’re getting fancy here!
  • Pour that foamy yeast mixture and warm milk into your flour well, whisking continuously. Keep going until you’ve got a smooth batter that’s just slightly thicker than heavy cream. Think pancake batter’s sophisticated cousin!
  • Cover your bowl with a clean tea towel and let it hang out in a warm spot for an hour. This is the perfect time to catch up on your favorite show or scroll through food pics on Instagram!
  • After the rest, stir in the baking powder. The batter will get super bubbly – that’s exactly what we want!
  • Heat up your skillet over medium-low heat (patience is key here!). Grease your crumpet rings like they’ve never been greased before.
  • Pour the batter into your rings, filling them about ¾ full. Now watch the magic happen! Those beautiful bubbles will start appearing and setting.
  • When the top looks almost dry and the bubbles have set (about 7-8 minutes), carefully remove the rings and give them a quick flip for a golden finish (just 2 minutes on the other side).

Notes

  • No crumpet rings? No problem! Clean, empty tuna cans with both ends removed work brilliantly.
  • If your first crumpet isn’t perfect, don’t panic! The first one is always the test subject (aka chef’s treat 😉).
  • These freeze beautifully! Just pop them in the toaster straight from frozen when the crumpet craving strikes.
