Ingredients
Scale
For the Tostadas:
- 8 corn tortillas
- 2 tbsp vegetable oil (or spray for baking)
- ½ tsp salt
For the Chicken Filling:
- 2 cups cooked, shredded chicken
- ½ cup salsa (mild or spicy, your choice!)
- 1 tsp taco seasoning
- ½ tsp garlic powder
- ½ tsp cumin
For the Toppings:
- 1 cup refried beans (or black beans)
- 1 cup shredded Colby Jack or cheddar cheese
- ½ cup diced tomatoes
- ½ cup shredded lettuce
- ¼ cup chopped fresh cilantro
- ½ avocado, sliced or mashed
- ¼ cup sour cream or Mexican crema
- ¼ cup pickled red onions (optional)
- 1 jalapeño, sliced (optional)
- Hot sauce or lime wedges for serving
Instructions
Step 1: Crisp the Tortillas
- Preheat your oven to 400°F (200°C).
- Place corn tortillas on a baking sheet. Lightly brush both sides with oil and sprinkle with salt.
- Bake for 8-10 minutes, flipping halfway, until golden and crispy. (For fried tostadas, heat oil in a pan and fry tortillas for 30-45 seconds per side.)
Step 2: Prepare the Chicken
- In a skillet over medium heat, combine shredded chicken, salsa, taco seasoning, garlic powder, and cumin.
- Stir well and cook for 3-5 minutes, until the chicken is heated through and coated in seasoning.
Step 3: Assemble the Tostadas
- Spread a layer of refried beans on each crispy tortilla.
- Add a generous spoonful of seasoned chicken on top.
- Sprinkle with cheese and let it melt slightly from the heat of the chicken.
Step 4: Add Toppings & Serve
- Pile on lettuce, tomatoes, cilantro, avocado, pickled onions, and jalapeños.
- Drizzle with sour cream, hot sauce, or a squeeze of lime juice.
- Serve immediately and enjoy!
Notes
- Make it healthier by baking the tortillas instead of frying.
- Spice it up with extra jalapeños or a drizzle of chipotle sauce.
- Short on time? Use rotisserie chicken for an even faster prep.
- Storage Tip: Store toppings and tortillas separately for best results.
