For the Crust

  • 2 ½ cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, chilled and cubed
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 68 tbsp ice water

For the Filling

  • 67 cups mixed apples (Granny Smith, Honeycrisp, or Jonagold), peeled, cored, and sliced
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 2 tbsp cornstarch or tapioca starch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter

For Finishing

  • 1 egg (for egg wash)
  • 1 tbsp milk
  • 1 tbsp granulated sugar

Instructions

  • Prepare the Crust: In a large bowl, whisk together the flour, salt, and sugar. Cut in chilled butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Divide into two disks, wrap in plastic, and chill for at least 1 hour.
  • Macerate the Apples: Toss the apple slices with sugars, spices, lemon juice, zest, and cornstarch in a large bowl. Let sit for 30 minutes to release juices.
  • Cook the Filling: Drain the apples, reserving the liquid. Cook the reserved liquid with 2 tbsp butter in a saucepan over medium heat until syrupy, about 5-7 minutes. Combine with apples.
  • Roll Out the Dough: Roll out one dough disk on a floured surface and line a 9-inch pie dish. Prick the bottom with a fork and chill. Roll out the second disk for the top crust or lattice.
  • Assemble the Pie: Fill the crust with the prepared apple mixture. Cover with the top crust or lattice, trimming and crimping the edges. Chill for 30 minutes.
  • Bake: Preheat the oven to 400°F (200°C). Brush the crust with egg wash and sprinkle with sugar. Bake for 15 minutes, then reduce heat to 350°F (175°C) and bake for 50-75 minutes until the crust is golden and the filling is bubbly.
  • Cool: Let the pie cool completely before serving to set the filling.

Notes

  • For a vegan crust, substitute butter with vegan butter and skip the egg wash.
  • Use a mix of tart and sweet apples for a balanced flavor.
  • To freeze, wrap the unbaked pie in foil and freeze for up to 2 months. Bake from frozen or after thawing in the fridge.
