              White Chocolate Caramel Fudge

              Serves: 25

              Description:
White Chocolate Caramel Fudge is rich and creamy with a pretty swirl pattern.

              Prep Time: 10 minutes
              Cook Time: 5 minutes
              Chill Time: 4 hours
Total Time: 4 hours 15 minutes

              Ingredients

              • 24 ounces (or 680g) white baking chips (Toll House brand premier white chips)
              • 14 ounces (or 396g) can of sweetened condensed milk
              • 2½ tablespoons + 1½ tablespoon heavy cream (2½ tablespoons is for the body of the fudge, and 1½ tablespoon is for the caramel)
              • 25 individually wrapped caramels (unwrap the caramels)

              Instructions

              1. Line an 8×8 baking dish with parchment paper. Leave a bit of an overhang to help lift the fudge out later. (If you don’t have parchment paper, use heavy-duty aluminum foil lightly sprayed with nonstick cooking spray.)
              2. Add the white chocolate chips, sweetened condensed milk, and 2½ tablespoons heavy cream to a medium-sized microwave-safe bowl. Heat in 30-second intervals, stirring well after each, until melted and smooth.
              3. Add the unwrapped caramels and 1½ tablespoon of heavy cream to a small microwave-safe bowl. Heat in 30-second intervals, stirring well between each, until melted and smooth.
              4. Fold ¾ of the caramel mixture into the white chocolate mixture. Fold 3–4 times carefully to create a marble effect (don’t blend completely).
              5. Evenly spread the white chocolate mixture into the prepared baking dish. Dollop the remaining caramel on top and swirl with a knife.
              6. Cover the dish with plastic wrap and chill in the refrigerator for at least 4 hours, or until set.
              7. Lift the fudge out using parchment overhang and slice into 5×5 squares. Keep refrigerated until ready to serve.

              Storage

              • Refrigerate: Up to 3 weeks in an airtight container.
              • Freeze: Up to 3 months if well-wrapped and sealed.

              Notes

              • Use sweetened condensed milk (not evaporated milk).
              • High-quality white chocolate chips melt best (Toll House or Ghirardelli).
              • Line the pan for easy lifting and cutting.
              • Optional: Sprinkle coarse sea salt on top for contrast.
              • Use a large, warm chef knife for clean cuts.

              Ingredients

              • 22 oz (2 11-oz. bags) white chocolate chips (Ghirardelli brand)
              • 14 oz can sweetened condensed milk
              • ¼ cup unsalted butter (room temperature)
              • 2 tsp cotton candy flavoring, divided (LorAnn Oils brand)

              Instructions

              1. Line an 8×8-inch baking pan with parchment paper, leaving enough overhang to lift the fudge out once set.
              2. In a medium saucepan over medium heat, melt together white chocolate chips, sweetened condensed milk, and butter for 6–7 minutes, stirring often until smooth.
              3. Divide the melted mixture evenly into two bowls.
              4. In the first bowl, add 1 tsp cotton candy flavoring and pink food color. Stir until evenly pink.
              5. In the second bowl, add 1 tsp flavoring and purple color. Stir until evenly purple.
              6. Alternate large spoonfuls of pink and purple fudge into the lined pan.
              7. Use a butter knife or small offset spatula to swirl the colors together.
              8. Cover the top with another piece of parchment paper and gently smooth the surface.
              9. Chill for 2 hours in the refrigerator or 4 hours at room temperature. Slice and serve.

              Storage

              • Refrigerate: Up to 2 weeks in an airtight container.
              • Freeze: Up to 1 month (wrap in plastic and foil).

              Notes

              • Use parchment (not foil) to avoid sticking.
              • Always use gel food colors (not liquid).
              • LorAnn Oils flavoring works best; start small and adjust.
              • Work quickly — the mixture firms as it cools.
              • Use high-quality chocolate brands (Ghirardelli, Nestle, Guittard).

              • Reheat gently if the chocolate thickens too quickly.
              • Avoid overcooking; stirring constantly keeps it smooth.
              • Use a warm chef’s knife for neat slices.

              • ¼ cup caramel ice cream syrup/topping

              White Chocolate Layer:

              • ½ cup granulated white sugar
              • ½ cup salted butter (1 stick)
              • 3 ounces marshmallow crème (a little over ½ cup, the rest of the jar)
              • ¼ cup sweetened condensed milk
              • 1 cup white chocolate chips

              Instructions

              1. Line an 8×8-inch baking dish with parchment paper sprayed with cooking spray.
              2. Make the Butterbeer layer: In a saucepan over medium-high heat, combine butter, marshmallow crème, sweetened condensed milk, sugar, and caramel syrup. Stir constantly.
              3. When the mixture starts to boil, set a timer for 4 minutes, stirring continuously until golden brown.
              4. Add butterscotch chips and stir until smooth.
              5. Remove from heat and whisk 1–2 minutes more. Pour into the prepared pan and place in the freezer to chill.
              6. Make the White Chocolate layer: In another saucepan, combine sugar, butter, marshmallow crème, and sweetened condensed milk. Heat, stirring constantly, until boiling.
              7. Reduce to medium and cook for 2 minutes, stirring continuously.
              8. Remove from heat and stir in white chocolate chips until melted (do not overstir).

              11. Cut into small 1-inch cubes and serve.

              Notes

              • For a “butterbeer foam” look, make the white layer thinner than the butterscotch layer.
              • Avoid overstirring white chocolate to prevent seizing.
